yield: 12 bowls
- 6 slices of bacon, cut into small pieces
- 1 medium onion, chopped
- 2 stalks of celery, chopped
- 1 medium red bell pepper, diced
- 3 medium red potatoes, diced
- 1 bag of frozen corn
- 1 tsp dried thyme
- salt and pepper
- 1/3 cup flour
- 6 cups chicken broth
- 1 bay leaf
- 1 cup half-and-half
- in a large pot, fry bacon
- once cooked, add veggies and seasonings
- cook until veggies are tender
- sprinkle flour over veggies and stir
- pour in broth and add bay leaf
- bring to boil
- then reduce heat and simmer 30 mins (or more)
- about 10 mins before serving, remove the bay leaf and add in the half-and-half
- serve
This one was a HUGE hit for us and it went great with BLTs! Bryker really enjoyed it and I think he loved it even moreso as a leftover! Yum!
